The "Cuve Close" Method invented in 1907 by Eugène Charmat. Our Pol Clément sparkling wine is produced according to the Charmat process by second natural fermentation in cuve close. The base wines are carefully selected and treated before fermentation. Then they receive an addition of sugar and yeasts creating the formation of bubbles. After fermentation, the wines are filtered before bottling. The base wines chosen for the elaboration of our "Charmat Method" sparkling wine have been delicately chosen for their bouquet ad freshness, thus guaranteeing the finesse of their aromas.
TASTING NOTES | A pale yellow robe with bright glints with a thin cordon of bubbles. Fresh and fruity nose (white flesh fruit) or even flowery nose (white flowers). Really light notes of fermentation. A fresh wine with good support of acidity. A fine bead and an ethereal bouquet with hints of apple and citrus fruit carry thought to the palate and it is balanced but mouth-tingling acidity which enhances the lingering finish.
DESIGNATION | Sparkling wine, Brut, Charmet Process. This dry French sparkling wine is made with 10% ugni blanc grape variety, the same used for Cognac. To obtain the desired style, grape's variety and proportions may vary, depending on the vintage characteristics.
VINIFICATION | Process by natural second fermentation in a closed tank. The base wines are carefully selected and treated before fermentation. Then they receive an addition of sugar and yeasts which will create the sparkling of this wine. After fermentation, the wines are filtered before bottling.
STORAGE | It is recommended to taste this wine between 5 and 8°C. Keep it somewhere dry and protected from light, heat, and freeze. Consume preferably within the year after bottling. Perfect as an aperitif with starters or accompany your seafood or white meat meals
TASTING NOTES | A nice pink robe with bright glints. With a thin cordon of bubbles. Warm fruity nose (red fruits: strawberry, blackcurrant). Has a good vinosity. Subtle marriage of effervescence with coloring materials. Nice persistence in the mouth. The harmonious sensation of sugar and acidity.
FOOD PAIRINGS | This blend of grenache, Gamay, and cabernet franc combine the flavors perfectly. Slightly off-dry, it's great as an asperitif and also makes an ideal match for fruit desserts or tapas and light dishes.
