About David Gölles

David was born in 1988, while growing up in Riegersburg he experienced his parents' pursuit of quality at first hand. Even as a child and young person, he was very enthusiastic about fruit harvesting, vinegar production, distilling fine spirits and attending events and presentations. During and after his studies in food and biotechnology at the University of Natural Resources and Applied Life Sciences in Vienna, he was drawn abroad again and again. There he gained experience in food processing companies. In the spring of 2016 he returned to his home country with a wide range of knowledge. Now he wanted to realize his dream here and distil his own products. Unlike the family business, however, he did not want to concentrate on processing regional fruit.

David Gölles and the house of whiskey, gin & rum stand for the next generation at Gölles.   The next chapter in the history of Styrian spirits. New ways, new ideas, new products and new tastes. A piece of homeland and love for the region in which we are allowed to manufacture and mature our distillates.

Anyone who visits David Gölles and Katharina Fleck in their house of whiskey, gin & rum immerses themselves in a world full of exciting, high-proof stories. Because each of the more than 700 barrels currently stored in the renovated inn in Riegersburg is its own exciting chapter in the exciting history of Styrian spirits. Like a good and instructive but always entertaining book full of captivating paragraphs, the house of whiskey, gin and rum in Riegersburg opens up to its visitors and provides exclusive insights into the production and storage of whiskey, gin and rum.

My father has been distilling whiskey in our Gölles manufactory since 2003. It has always been important to us to distil the types of grain that grow on our fields on our own doorstep.

Ruotker’s Whiskey Alois I.

ABOUT | Alois Gölles has been distilling his famous old plum in Riegersburg for over 30 years and storing it in oak barrels. Our Alois is an expressive rye whiskey that is finished for a good 12 months in old plum casks.

TASTING NOTES | The harmony of impetuous rye aromas and soft fruit notes results in an incredibly complex and extraordinary whiskey.

Ruotker’s Whiskey Ruediger II.

ABOUT | Our Classic "Bourbon Blend".

TASTING NOTES | Soft corn notes (popcorn, caramel and dark chocolate). Strong, spicy rye aromas (coffee, roasted aromas, lively and impetuous on the finish). Grainy spelled and wheat notes (reminiscent of freshly baked bread). Spicy barley aromas (classic, known to the whiskey connoisseur).

ALCOHOL | 43.3%

CEREALS | Corn (approximately 60%), rye (approximately 20%), barley, spelt and wheat

DURATION OF STORAGE | 4-15 years

STORAGE | Ruediger consists of about 10 individual parts and 5 different grains that have been stored for different lengths of time. The following barrels were used:

Virgin American White Oak, American white oak, first filling, 190 l

American White Oak, American white oak, second filling, 190 l

French barriques, 225 l

Sherry casks, 250 l

Sherry cask, 600 l

Ruotker’s Whiskey Wilhelm III.

ABOUT | Wilhelm unites Scotland and Austria. The finest Scottish barley, heavily smoked over a peat fire, processed, distilled and matured here in Riegersburg.

TASTING NOTES | A strong single malt whiskey with intense smoky aromas. Matured harmoniously in American white oak barrels. Expressive and complex, with corners and edges.

Ruotker’s Whiskey 100% Barley

ABOUT | There is always a particularly unusual cask in our cellar: Oloroso Sherry Cask. The slightly different single malt. This whiskey matured in a 45-year-old Oloroso sherry cask.

TASTING NOTES | The spicy barley aroma is elegantly enveloped by intense yeast and grape notes. Complex in taste, elegant on the palate.

Ruotker’s Whiskey 100% Wheat

TASTING NOTES | Tinctive sherry tone. Green, unripe walnuts or hazelnuts on the nose and palate. Clear and above all strong yeasty notes. Soft and mild finish. Complex and exotic taste spectrum

ALCOHOL | 40.3%

STORAGE | Sherry cask approximately 50 years old, Oloroso sherry, 600l

TYPE OF GRAIN | 100% pure wheat whiskey

STORAGE PERIOD | 6 years

NUMBER AVAILABLE | 1103 bottles

FEATURES | No sherry finishing, but storage in sherry casks. Large sherry cask and therefore also available in larger quantities. The naturally soft wheat is made even milder by the sherry cask. Wheat itself is one of the most reserved grains in my experience, so this grain takes on a lot of the typicity of the barrel.

It has always bothered me with many gins that I only consciously perceived a handful of often more than thirty ingredients. That's why I wanted to produce a gin reduced to the essentials for myself, in which each of the individual ingredients plays a decisive role in the end product.

Hands On Gin

ABOUT | Styrian craft dry gin. Distilled from only a handful of hand selected essentials. No bullsh*t added. Show your respect with the highest of fives.

JUNIPER | The juniper, the indispensable basis of every gin. Finely ground juniper berries give the Hands On Gin the pleasantly tart, spicy note that makes the hearts of fans of classic gins beat faster.

BALCK CURRANT | The black currant, our master distiller's favorite fruit. It represents a delightful counterpoint to the tart, down-to-earth juniper tone. Subtle on the nose, it comes into its own on the palate with a sweetish full-bodiedness.

CORIANDER | The coriander green, the subtle intensity. Chopped shortly before processing, the coriander green contributes significantly to the juicy and spicy taste profile, even in minimal quantities. Popular not only in Asian cuisine, the circle of lovers will also grow considerably with the distilled form.

LEMONGRASS | The lemongrass, the green refreshment. Fresh lemongrass, squeezed and cut into small pieces to ideally incorporate the invigorating citrus aromas into our HANDS ON GIN. Invigorating notes of green pear and young rhubarb on the palate.

ORANGE PEEL | The orange peel, the bittersweet finishing touch. Smallest amounts of orange zest combine the lively freshness of lemongrass and coriander with the earthy richness of juniper and currant. The connoisseur will not miss the fact that the unique aroma of the orange is not neglected.

From the beginning we were enthusiastic about the taste of rum, which was still purely white at the time. Smaller quantities also found their way into the barrel every year and today we are very fortunate, since we can also fall back on reserves that are more than 10 years old.

Ron Johan Vanilla Rum

ABOUT | Precious organic bourbon vanilla from Madagascar is marinated in rum and thus reduced to its pure taste. This intensely aromatic reduction is added to our creamy, soft dark rum made from Caribbean sugar cane molasses. Unlike most other vanilla rums, we don't work with vanillin or artificial flavors, but only with real organic vanilla. The result is an authentic Spiced Rum with an impressive taste: Ron Johan Vanilla.

ALCOHOL | 38%

STORAGE | New and used American white oak barrels

FEATURES | Spiced rum. With organic bourbon vanilla from Madagascar. Deliberately low in alcohol. Particularly creamy and soft

Ron Johan White Rum

ABOUT | Fine and fresh, white rum made from sugar cane molasses. Ideal for pure enjoyment or as a high-quality ingredient for many drinks and cocktails.

TASTING NOTES | Tropical fruit notes on the nose. Exotic fruit on the palate, light acidity and intensive rum aromas. Balanced sweetness in the finish.

ALCOHOL | 40%

STORAGE | Steel tank

FEATURES | Distilled in spring 2018. Stored in neutral stainless steel tanks, therefore no color and no wood aroma. Very fresh taste, yet incredibly soft and creamy. Surprisingly intense fruit flavor. Molasses from South, Central America and the Caribbean.

Ron Johan Old Plum Rum

ABOUT | Dark, fruity-aromatic and above all a soft rum made from sugar cane molasses, finished in used "Gölles Alte Zwetschke" barrels.

TASTING NOTES | Fruity mild taste. Noticeable plum aroma. Prunes, candied fruits. On the palate spicy, lush, mild and soft.

ALCOHOL | 41%

STORAGE | New and used American white oak casks and ex-bourbon casks. Then 1 year finishing in the "Gölles Alte Zwetschke" barrel.

FEATURES | Distilled from fine molasses. Finished in the old plum barrel. Intense influence of the barrel on the product.

Ron Johan Dark Rum

Ron Johan Strong Rum

ABOUT | Dark, strong, aromatic rum made from sugar cane molasses. Strong and bottled at cask strength.
