Soir De Paris, Sparkling Wine

TASTING NOTES | A pale yellow robe with bright golden glints. Sparkling with fine and long-lasting bubbles. Pleasant nose with lemon aroma and white flowers (honeysuckle). Very light notes of fermentation.  Effervescence on the palate. Generous citrus fruit flavors are enhanced with creamy nutty yeast characters providing both richness and structure. 


PROCESS | Process by a natural second fermentation in a closed tank. The base wines are carefully selected and treated before fermentation. Then they receive an addition of sugar and yeasts which will create the sparkling of this wine.  After 6 months of fermentation, the wines are filtered before bottling.

VARIETALS | 100% France Chenin, Chardonnay, Colombard, Folle blanche, Ugni Blanc

ALCOHOL CONTENT | 12%

VINIFICATION | 6 months of fermentation in the tank - Premium sparkling wine

Pol Clément Rosé, Sparkling Wine

TASTING NOTES | A nice pink robe with bright glints. With a thin cordon of bubbles. Warm fruity nose (red fruits: strawberry, blackcurrant). Has a good vinosity. Subtle marriage of effervescence with coloring materials. Nice persistence in the mouth. The harmonious sensation of sugar and acidity.

FOOD PAIRINGS | This blend of grenache, Gamay, and cabernet franc combine the flavors perfectly. Slightly off-dry, it's great as an aperitif and also makes an ideal match for fruit desserts or tapas and light dishes.

DESIGNATION | Sparkling wine, Rosé, Charmat Process
VINIFICIATION | Second natural fermentation in vat close. The basis wines are carefully selected and treated before fermentation. Then they receive an addition of sugar and yeasts which will create the sparkling of this wine.  After fermentation, the wines are filtered before bottling. 

STORAGE | It is recommended to taste this wine between 5 and 8°C. Keep it somewhere dry and protected from light, heat, and freeze. Consume preferably within the year after bottling. 

POL CLEMÉNT

Pol Clément Brut, Sparkling Wine

TASTING NOTES | A pale yellow robe with bright glints with a thin cordon of bubbles. Fresh and fruity nose (white flesh fruit) or even flowery nose (white flowers). Really light notes of fermentation. A fresh wine with good support of acidity. A fine bead and an ethereal bouquet with hints of apple and citrus fruit carry thought to the palate and it is balanced but mouth-tingling acidity which enhances the lingering finish.  


DESIGNATION | Sparkling wine, Brut, Charmet Process. This dry French sparkling wine is made with 10% ugni blanc grape variety, the same used for Cognac. To obtain the desired style, grape variety and proportions may vary, depending on the vintage characteristics.

CHARLES GRIFFON / POL RENE

Charles Griffon / Pol Rene, Sparkling Wine

TASTING NOTES | A pale yellow robe with bright glints with a thin cordon of bubbles. Fresh and fruity nose (white flesh fruit) or even flowery nose (white flowers). Really light notes of fermentation. A fresh wine with good support of acidity. VEUVE OLIVIER

Veuve Olivier Brut, Sparkling Wine

TASTING NOTES | Pale yellow and elegant color with fine bubbles. A fruity and elegant sparkling wine, with aromas of fresh butter and cake. Fresh and harmonious sparkling wine.


HARVEST | The basic wine is fermented at a low temperature. The second fermentation takes place at 14°C for 2 weeks, followed by dosing. The Brut is a blend of Ugni Blanc and Airen while the Rose actually uses the Spanish varietal Bobal. 

SOIL | The soil for the Blanc is predominately chalked, while the Rose grows in clay & limestone.

VINIFICATION | Machine harvest. The basic wine is fermented at a low temperature. The second fermentation takes place at 14 degrees C. for 2 weeks, followed by dosing.​

Veuve Olivier Rosé, Sparkling Wine

TASTING NOTES | Stunning salmon-pink tones, very attractive color. Intense and fine, dominated by notes of red berries. The combination of fine bubbles and delicate aromas makes this wine a delightfully light and silky rosé. Aromas of red berries like cherries and strawberries, mellow & well-balanced.

FOOD PAIRINGS | Serve as an aperitif or to complement red berry desserts, fruit salads, and some fruit pastries.


HARVEST | The basic wine is fermented at a low temperature. The second fermentation takes place at 14°C for 2 weeks, followed by dosing. The Brut is a blend of Ugni Blanc and Airen while the Rose actually uses the Spanish varietal Bobal. 

SOIL | The soil for the Blanc is predominately chalked, while the Rose grows in clay & limestone.

VINIFICATION | The grapes are harvested mechanically and pressed directly. Alcoholic fermentation takes place under controlled temperature.

My father has been distilling whiskey in our Gölles manufactory since 2003. It has always been important to us to distil the types of grain that grow on our fields on our own doorstep.

From the beginning we were enthusiastic about the taste of rum, which was still purely white at the time. Smaller quantities also found their way into the barrel every year and today we are very fortunate, since we can also fall back on reserves that are more than 10 years old.
